With a stereo input, you can ensure that no low-frequency signal escapes the subwoofer. If you only take a left or right channel from your mixer because your subwoofer only has a single mono input, you’ll get an unreliable picture of the total available SUB in your audio signal. This can be quite problematic, especially when panning certain tracks in your mix. In short, from a technical standpoint, a stereo input saves you a lot of hassle and disappointment, trust me!
